This past month students from the entire student body of Auguste Escoffier School of Culinary Arts were challenged to create dishes that included spring produce. The Spring Break Challenge took place from March 26 to April 6, 2021 and encouraged students to break out of their comfort zone and try seasonal produce for both inventive culinary and pastry delights.
